I become self-conscious when people watch my matches

When I notice people watching me play I become self-conscious and lose concentration.

I am usually the better athlete and therefore I assume others expect me to win and therefore I feel pressure or added pressure to win and then I lose.

Physical part is not the key to winning

The assumption of what people think comes from your own mind. We think that people think in the same way as we think. ;)

Which means, that's it's actually you who assumes that better athletes should tennis win matches.

Physical part of tennis is just 1/4 of the skills needed to play well. You also need technique, tactics and mental skills.

So I would first counter your assumptions that better athletes should win by saying that the person who can make the most of their physical, technical, tactical and mental skills will probably win.

In my opinion, the player with better tactics and stronger mind will probably win, even if his physical state is not that good and his / her technique is not that sound.

Which means, that you are completely free of pressure if you are better physically, since this part is a minor factor in determining who wins.

(The exception is of course if one is so poorly prepared, that cannot last through the match playing his / her own game.)
